LAMB GREEN TRIPE (27117)
Lamb Green Tripe comprises the two main stomachs from Ovine animals (stomach # 1 and stomach # 2). Tripe is rinsed on the outside with cold water, opened up and turned inside out removing any solids i.e. ingesta & grass taking extra care to remove any Bolas. Inside of Green Tripe is then rinsed with cold water and well drained. Tripe is not to be scalded.
