Malted Barley Flour, 50 lbs bag (223250)

Malted barley flour is a nutrient-dense, enzyme-rich flour made from sprouted, dried, and milled barley, which activates enzymes—primarily amylase—that convert starches into simple sugars. In baking, this "diastatic" malt improves yeast fermentation, enhances crust color via the Maillard reaction, and results in a softer, more voluminous, and moist crumb. Diastatic Power 130-165°L.
