At Brooklyn Cured, we make small- batch charcuterie using sustainable meat and fine-dining technique. Our product line includes sausages, hot dogs, deli meats, and salumi using meat raised with no antibiotics from farms that we trust. Our flavor profiles are inspired by the cultural diversity and culinary history of Brooklyn, New York neighborhoods that have attracted hard-working people from all over the world.

We cure pastured ham for one week with brown sugar and a bit of bourbon. The hams are smoked with applewood and glazed with local maple syrup.

We brine our beef with honey, brown sugar, and garlic, and then coat it with a classic spice mix of coriander, black pepper, and mustard seeds. We smoke the pastrami gently for 4 hours until it just tender. It’s great for slicing thin and serving as a cold or hot sandwich.
