Concentrated Cloudy Lemon Juice: Lemons enter, according to their size, into goblet-type extractors where the natural lemon juice is obtained. This juice is then centrifuged, where the quantity of pulp is conditioned according to customer requests. The centrifuged juice is then sent to the plate-type juice concentrator (APV) or falling film tube (TASTE) where it is first pasteurized for enzyme inhibition and then concentrated, reducing the water content through evaporation to specified parameters. The concentrated cloudy lemon juice is cooled and transported to the BATCH tank. Once the batch has been approved by Quality Control, it is released for bottling. The juice is filtered and sent to the bottling area, where it is packaged in new drums with double polyethylene bags as primary packaging, both suitable for food use. It is kept at temperatures between -18°C and -25°C until dispatch. It is worth noting that stored at a temperature of -18°C, it can be kept in perfect condition for more than two years.

Concentrated Clarified Lemon Juice Concentrated clarified lemon juice is made from natural or cloudy concentrated lemon juice. The juice is centrifuged to correct the pulp content, then sent to ultrafiltration equipment where dissolved solids are removed. It is then transported through pipelines to a resin column where ion exchange occurs, a process called debittering. The clear juice is pasteurized and sent to an evaporative concentrator where it is concentrated to specifications. It is then cooled and sent to the batch tank for batch formation. Once approved by quality control, it is released for bottling after being filtered. It is packaged in new metal drums with lids and double-sealed polyethylene bags. Once packaged and labeled, the batch of cloudy concentrated lemon juice is immediately transported to the freezing chamber, where it is kept at temperatures of -18°C to -25°C until dispatch. Under these storage conditions, the shelf life is two years.
