The Vivolac ARTISANA Process 800/818 series is a premium line of
cultures for direct, cold inoculation of cottage cheese dressing. These
U.S. patented cultures added to cottage dressing help prevent the
outgrowth of spoilage bacteria extending naturally the shelf life of
your product. The program consists of several blends of citrate and
non-citrate fermenting cultures to create various levers of diacetyl
production.
