Our Andante Mustard Powder comes from the Axten family farm in Western Canada. The mustard is intercropped with maple peas, which use the mustard plants as a natural trellis while providing the nitrogen they need. This is powerful powder, sweet and sharp, perfect for homemade mustard, pan sauces, potato salad, dressings, drink rims and adding a punch to everything you cook.

Our ground Buffalo Ginger is an heirloom ginger variety grown by a group of farmers in the mountains of northern Vietnam. Known for its fruity, floral aroma and powerful heat, this is a complex and flavorful ginger powder that will elevate baked goods, stews and curries, and beverages from hot drinks to cocktails.

Our savory, funky Fermented White Peppercorns are highly prized in Indonesia but rarely found in the US. They add a deep umami flavor and funk to everything they touch. They're grown on a family farm on the island of Bangka by a farmer named Pak Sugiri and his son, Ilham. The peppercorns are picked fresh and fermented according to traditional methods. Grind over steak to mimic the flavor of dry aging, over veggies for heat and depth, or in traditional Cantonese and southeast Asian dishes that call for white pepper.

Our Flowering Hyssop Thyme has a beautiful floral, herbaceous flavor and aroma. It has an ancient history of culinary and medicinal usage in Turkey, where it is the primary ingredient in za'atar. Use it in place of regular thyme with roasted chicken, grilled vegetables and tomato sauces.

Our rich Sweet Allspice grows in cloud forests of Guatemala. Its warming, nuanced flavor is reminiscent of toasted almonds and baked fruit. Allspice is the dried berry of a beautiful evergreen tree, and one of the few classic spices indigenous to the new world. Used widely in Caribbean and Mexican cuisines, its characteristic combination of sugar and spice is a key element of jerk chicken, mole sauces and many other dishes.

Our ground Laurel Bay Leaf is a pure expression of the savory, herbal flavor of the bay leaf. Sourced from the rocky Mediterranean coastline of Turkey, then dried and ground into a powder, it's a versatile alternative to whole bay leaves. Use 1/8 tsp. in place of a whole bay leaf, and there's no need to remove anything from the pot — the powder is edible when ground. Our piney, aromatic rosemary is grown regeneratively in Provence by a cooperative of partner farmers. It boasts a rich, complex, clean flavor that is the result of both careful farming practices and a superlative terroir. This superlative rosemary is one of the four components of our origin blend Herbes de Provence. Provence is known for its wines, which benefit from the limestone-rich soil, and that same soil nurtures our rosemary. It's harvested in early summer, when the small, verdant needles are cut and dried as they ripen to a brilliant green. We pack it as quickly as possible to preserve the delicate oils that give this herb its signature citrus-peel flavor. Add this terroir-driven rosemary to braises, sauces, stews, rubs, baked chicken and mushroom galettes. Or try it in a white bean soup!

Our zesty, bright Oregano Flower Buds come from Turkey, where they are picked by hand just before they open into oregano flowers. These tiny pinecone-shaped buds have everything we love about oregano, but with a particularly beautiful spicy, hoppy twist. Crumble into salad dressings and over pizza and pasta, roast chicken and meat marinades, or just sneak them into your grilled cheese. These buds will quickly become a pantry staple.

Our cloves are grown, harvested and ground by our partner farmers on the small island of Pemba, which is famous for its cloves. They’re hand-picked at the last possible moment before flowering, ensuring the largest size and most mature flavor, and then dried in the tropical sun. They're bright pink when ripe, and they turn brown as they dry. They have a bright, sweet intensity with a rich warmth and a numbing menthol buzz. Add to braised meat or mulled wine, or use in all sorts baked goods, from cakes and pies to muffins and quick breads.

Our Purple Stripe Garlic powder, grown in the mountains of northern Vietnam, is savory and sweet, and its flavor adds depth and complexity to everything it touches. Our gingery, savory, workhorse-of-the kitchen Robusta Black Peppercorns come from a small farm in Vietnam. They're harvested when the peppercorns are ripe, and their classic, herbaceous, robust flavor captivated us at first grind! They're grown by two friends, Dūng and Thanh, using regenerative integrated agricultural techniques. Vietnam's prized Robusta coffee is intercropped with the pepper vines, which provide shade for the coffee bushes and maybe even pick up a bit of that Robusta flavor. This is your daily black pepper.

Our rich, sweet Smoked Pimentón Paprika comes from a protected region in Western Spain, where sweet red peppers have been grown and smoked for centuries. Fresh peppers are slowly dried over oak coals, which imbue them with a rich, smoky flavor that imparts a savory depth and gorgeous color. Use it to add depth and complexity to pasta sauce or chili, use it as a rub for grilled or roasted meats, or sprinkle it over sauteed veggies. This paprika comes from the Extremadura region, famous for pimentón de la vera, which has a Designation of Protected Origin status from the European Union.
