Isigny Mimolette is made from the finest Normandy milk. It gets its striking orange color from the natural coloring agent annatto, which is added to the milk when it is given. During the at least 12 months of its maturation, its paste becomes firm and somewhat crumbly and develops notes of hazelnut. After 12 months, the Mimolette is robust, racy and spicy.

Le Cyrille is matured for 15 days with a white fluffy rind, with a fine layer of charcoal (ash) at the heart just like the Morbier du Jura cheese. It will be remarkable on a cheese platter. You will discover lactic and creamy flavours for an overall fresh taste.
Artisanal production. Soft cheese made from goat's milk, from the Périgord. The Perigord is considered gourmet paradise. It is famous for its excellent cuisine, the black truffle (the best known variety), the foie gras, goat cheese, walnuts, wild game and more. This region in southwest France is characterized by a mild climate with plenty of forest and vast limestone plateau. The Pico Affiné: a small goat's camembert with natural rind covered with yeast. Matures 10 days at the manufacturer's and matures further in its packaging.
l'Affiné au Chablis Germain cheese is made from cow’s milk. Its lightly gold-tinged rind reveals a meltingly soft and creamy centre. It gets its flavour and characteristic colour to its wash with Chablis wine. Its flavour is mild with a fresh, floral and fruity aroma.
After ripening for 4 months, Smeraldo is slowly infused with white Piemont white truffles (Tuber Magnatum Pico, 5%), visible in the veins of the cheese. During its maturation the white veins tend to get darker but the white truffle flavour remains intact. This is a handcrafted cheese which makes every wheel unique with its own colour, shape and weight
Fromi exclusive. The Chèvre D'Argental is a soft cheese made from 100% goat's milk with a white mould rind. Its unique hexagonal-shape of the 1 kilo piece makes it attractive in the cheese counter. The Chèvre D'Argental has a fine goat flavour without being too strong. The longer this cheese ripens, the smoother, creamier and more spreadable its paste becomes. As ripening progresses, the cheese becomes more flavourful, yet without becoming too strong. Maturing period: min. 2 weeks.
Fromi exclusive. The Crémeux D'Argental is a soft cheese from the Lyon region with a white mould rind. This cheese is very creamy and matures very slowly. When it has reached the right degree of maturity, it can be spread. Thanks to ultra filtration technology, the Crémeux D‘Argental’s paste is very soft. It offers consistent quality and excellent nutritional values: calcium, phosphorus, and serum proteins. It has a mildy and creamy taste.

You will love this Brie with truffles with its melting texture and creaminess: the cheeses come 3/4 ripened so that the aromas and truffle shavings diffuse slowly throughout the cheese. The powerful taste of Brie combines with the full-bodied and highly present flavour of truffle for a refined and perfectly balanced pairing.
item #28251 Following the success of the perfect blend of one of France’s most emblematic cheeses and the world’s most famous mushroom, we are now presenting a version of the Camembertine beautifully packaged in a high-quality wooden box. The recipe remains the same with around 1 month of aging. And its sensation on the tongue is one of a kind: the creamy, fondant texture of the camembert blends perfectly with the woody, full-bodied notes of the Périgord black truffle (Tuber Melanosporum Vitt. 3%). Its flavours are long-lasting and delicate.
Ripened with walnut liqueur. The Tomme des Croquants is shaped in a "wicker basket" mould and rubbed during ripening (around 6 weeks) with a salty solution of walnut liqueur and caramel for a lovely brown colour and subtle aroma of walnuts. The texture is creamy and melting. There are some openings in the paste.

Fromi exclusive. The Brebirousse is a lovely soft cheese, made from pure ewe’s milk and with a pinkish mould rind. It is a real feature on the shelf thanks to its unique shape, colour and packaging. Its has a smooth, spreadable texture with a typical ewe‘s milk flavour. It is a cheese to share with the entire family! Maturing period: min. 2 weeks.
Hand-ladled into the moulds. Soft cheese that is ripened at the dairy for at least 10 days. Blue and green mould spots may develop on the rind during the ripening process. Firm and smooth. Aromatic flavour.
