Thymly’s Alpha Gum is made via a special milling process that converts all-natural flaxseed into a powder. Alpha Gum is designed to be free flowing, and easy to hydrate. This product is considered a 1:1 replacement for Guar Gum in baked goods. The blend is bland in taste. Product characteristics include enhanced textural attributes, better structure & viscosity, and increased moisture. This product is also high in fiber and Omega-3. Directions: The recommended usage for this product is 8-16 oz. per 100 cwt. of flour or could be used at a higher level.

Our Dough Conditioner #1 Perfection is a well-balanced combination of wholesome, natural free-flowing ingredients with a high degree of uniformity to condition the flour and water. Perfection strengths the dough for dependable resilient dough with better tolerances, which is beneficial in shops with tight production schedules. Our recommended usage level is three to four ounces per 100 pounds of flour.

Liquid egg whites are carefully separated from yolks and visually inspected again before being filtered and dried. Egg white powder is pasteurized in a hot room to assure product safety. Guar Gum powder is a high viscosity, fine mesh product. Used where rapid hydration is required. This product is used in instant soup mixes, instant gravy and in baked goods where either viscosity or water control is required. Typical usage level varies from 0.1% to 0.5%. Guar Gum is stable over a wide pH range, but in liquid products, it should not be used when the PH is below 4.0. Hydrates in cold water but performs better when heated and cooled.

Sodium Propionate is a non-dusty, white agglomerate / powder. Both forms are chemically the same. This product conforms to the FCC, E281, JECFA (FAO/WHO) and Japanese Standards of Food Additives. It is an effective growth inhibitor of most molds and bacteria and widely used in various bakery products to prevent mold and rope formation and to extend the normal shelf life. It is usually preferred in non-yeast leavened products because the calcium ions in calcium propionate can interfere with most chemical leavening agents. This product is easy to handle and to incorporate into the flour.

Directions: SR-8R-SS has a neutralizing value of 95. 125-pounds of SR-8R-SS are required to neutralize 100-pounds of Soda. The combination of SR-8R with Sodium Bicarbonate produces a stable source of carbon dioxide in baking with no after flavor.
